Yes, absolutely. If your family is anything like mine, you will need more than 12 muffins. They disappear fast at our house.

- 2-3 large ripe bananas
- ¾ cup sugar
- 1 egg, slightly beaten
- ½ tsp vanilla
- ½ cup butter, melted
- 1½ cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ½ cup chopped walnuts
- Preheat oven to 375 degrees. Prepare a muffin tin with liners and set aside.
- Mash the bananas thoroughly in a medium-sized mixing bowl.
- Next, add sugar, slightly beaten egg, and vanilla. Mix into the mashed bananas until well combined.
- Now add the melted butter.
- In a separate bowl, combine all the dry ingredients and stir until blended.
- Add the dry ingredients to wet ingredients and mix until everything is wet, about 10-12 strokes.
- Add the chopped walnuts. Stir a few times until mixed throughout muffin batter.
- Evenly scoop batter into prepared muffin tin.
- Bake at 375 degrees for 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
