Basmati Rice with Turmeric and Peas

 My new favorite thing to do when I make rice is to turn it yellow with Tumeric. The kids think it is awesome, and fun to eat, and I love it because it’s a simple way to add more antioxidants to our diet.

I also love to sneak in vegetables any way I can. Throwing in frozen peas when the rice cooker finishes up is a simple way to add one more veggie to our meal.

Rice flavored with turmeric goes well with many types of food. We love it with Chicken Tikka Masala, Stir fry’s, and Ecuadorian lentils (I have a specific recipe for Ecuadorian Yellow Rice.)

Whether you are cooking your rice on the stovetop, rice cooker, or using minute rice, give this method a shot! Your body will thank you!

Simple way to jazz up rice. The Turmeric adds powerful antioxidants and the peas add a pop of sweetness.

Ingredients
  • 2 cups basmati rice
  • 2 tsp turmeric
  • 1 tsp salt
  • ¼ cup butter or vegetable oil
  • 4 cups water if making on stove-top (3½ infusing a rice cooker or instant pot)
  • 1½ cups frozen peas
Instructions
  1. If cooking in a rice cooker....Add rice, turmeric, salt, butter or oil, and water. Set for cook. When rice is finished cooking, open lid and pour in frozen peas. Gently stir peas into rice. Shut lid and let sit for 8-10 minutes until peas are cooked. Serve
  2. If cooking on the stove....Add rice, turmeric, salt, butter or oil, and water. Bring to a boil, reduce heat to low (make sure rice is still at a low simmer) cover and set timer for 20 minutes. when rice is finished cooking remove from heat, add frozen peas stir them into the rice and return lid to pot for 8-10 minutes. Serve
  3. *If using an instant pot reduce water to 3½ cups and add all the ingredients at once. Set to 3 minutes on high. When done, allow to naturally release. Add the frozen peas, stir and return lid for 5-8 minutes or until peas are cooked and tender.
  4. **If using minute rice reduce water to 2 cups and half all other ingredients except rice....boil water, butter or oil, salt and turmeric. Add rice, remove from heat and cover. Let sit for 5 minutes. Add ¾ cup frozen peas, stir until combined, cover and let sit for 5-8 minutes

    Made this for dinner tonight with Coconut Curry Chicken and stir-fried sugar snap peas – was wonderful!
