Ice cream cakes have become one of our favorite desserts, especially in the summer. They’re such an easy, fun way to serve ice cream, whether just for your family, dinner guests, or a special occasion like a graduation or a birthday. One thing that usually surprises people is how quickly you can put an ice cream cake together. The only issue is when you’re working with the ice cream, it can get a little soft. In order for it to set and freeze again, it needs to have enough time in the freezer. It works best to prepare it the night before you serve it so that the ice cream is nice and solid.
This recipe is specifically written for cookies and cream ice cream, but I have done this same method with mint chocolate chip ice cream, and it was awesome. Having the brownie on the bottom makes it a perfectly portioned brownie sundae. The only problem is it’s hard to stop at one piece! Tips for making Brownie Oreo Ice Cream Cake
- Prepare the brownie layer according to box instructions and let it cool completely.
- Roughly chop the Oreos and reserve half a cup or so to sprinkle on the finished ice cream cake.
- Use the remaining chopped Oreos to sprinkle evenly over the brownie layer.
- Generously drizzle chocolate syrup over the Oreo layer.
- Cut the ice cream container off or remove it while still keeping the block of ice cream intact. This way it is easy to use a large knife and cut it into 1-inch thick sections that you can easily place on top of the Oreo-chocolate-sauce layer.
- Use a plastic bag over your hand to smooth out the ice cream layer–it’s so cold…
- Top with whipped cream and the remaining crushed Oreos.
- When assembling the cake, work quickly so the ice cream won’t melt too much.
- Give the cake plenty of time in the freezer for the ice cream to harden. I suggest at least 6-8 hours, but overnight is best.
- 1 (18.3 oz) brownie mix, prepared according to package directions in a 9x13 dish
- 1 (1.5 liter) cookies and cream ice cream
- 24 Oreos, regular size
- Hershey's Chocolate Syrup (for drizzling)
- 1 (8 oz) Cool Whip
- Prepare the brownie layer according to box instructions and let it cool completely.
- Roughly chop the Oreos and reserve half a cup or so to sprinkle on the finished ice cream cake.
- Generously drizzle chocolate syrup over the Oreo layer.
- Next, remove the ice cream from its container and slice it into 1-inch pieces to fit on top of the brownie layer.
- Once you have the ice cream in place, you can use a plastic baggie to help press the ice cream into a nice even layer.
- Top the ice cream layer with the Cool Whip.
- Finish it off with the remaining crushed Oreos.
- Cover and quickly get it into the freezer for at least 6-8 hours before serving. Overnight is best.
- Drizzle with more chocolate sauce when serving if desired.
