Brownie Oreo Ice Cream Cake

A glass 9x13 dish of Brownie Oreo Ice Cream Cake at a diagonal.Whether you’re a brownie lover or an Oreo lover, you’re going to love this new Brownie Oreo Ice Cream Cake recipe. I take a chewy chocolate brownie and sprinkle it with a heavy layer of crushed Oreos, and drizzle chocolate sauce on top. Next comes the cookies and cream ice cream, and finally, it’s topped off with Cool Whip, more Oreos, and chocolate sauce. If you’re not a big fan of brownies, try the Easiest, BEST Ice Cream Cake Ever.

Ice cream cakes have become one of our favorite desserts, especially in the summer. They’re such an easy, fun way to serve ice cream, whether just for your family, dinner guests, or a special occasion like a graduation or a birthday. One thing that usually surprises people is how quickly you can put an ice cream cake together. The only issue is when you’re working with the ice cream, it can get a little soft. In order for it to set and freeze again, it needs to have enough time in the freezer. It works best to prepare it the night before you serve it so that the ice cream is nice and solid.

A square piece of ice cream cake sitting on a small white plate with a bite taken out of one corner with chocolate sauce drizzled on top and on the plate. Scattered around the plate are Oreos with another serving of cake on a small white plate in the background. This recipe is specifically written for cookies and cream ice cream, but I have done this same method with mint chocolate chip ice cream, and it was awesome. Having the brownie on the bottom makes it a perfectly portioned brownie sundae. The only problem is it’s hard to stop at one piece! Next time you have something to celebrate, make this ice cream cake. Your family and friends will rave about it!

  • Prepare the brownie layer according to box instructions and let it cool completely.
  • Roughly chop the Oreos and reserve half a cup or so to sprinkle on the finished ice cream cake.
  • Use the remaining chopped Oreos to sprinkle evenly over the brownie layer.
  • Generously drizzle chocolate syrup over the Oreo layer.
  • Cut the ice cream container off or remove it while still keeping the block of ice cream intact. This way it is easy to use a large knife and cut it into 1-inch thick sections that you can easily place on top of the Oreo-chocolate-sauce layer.
  • Use a plastic bag over your hand to smooth out the ice cream layer–it’s so cold…
  • Top with whipped cream and the remaining crushed Oreos.
  • When assembling the cake, work quickly so the ice cream won’t melt too much.
  • Give the cake plenty of time in the freezer for the ice cream to harden. I suggest at least 6-8 hours, but overnight is best.

So EASY and yummy! Changed up the ice cream and Oreo flavors but kept the method of the recipe. Perfect and versatile!
