Easy Cheesy Breakfast Casserole

 Potatoes, sausage, onion, and peppers baked together with cheese and eggs are a delicious and easy breakfast. You’ll be surprised at how simple this Easy Cheesy Breakfast Casserole recipe is and you will love the flavor! Perfect for a holiday breakfast or when you need to feed a crowd. It’s the perfect savory breakfast partner for these Copycat Diner Style Pancakes, they are always a hit!

Jimmy Dean makes a sausage and potato skillet you can find in the freezer section. It will either be by the hashbrowns or near the frozen breakfast meats and entrees. If you can’t find the sausage and potato skillet, no worries. Just get regular hashbrowns and a breakfast meat of your choice. You can also choose to add some chopped onion and peppers or keep it simple with just hashbrowns. This casserole is very versatile. 

I usually make breakfast casseroles for holiday mornings. I also like to make them when we have breakfast for dinner. This breakfast casserole is especially yummy because you add a little butter to the hashbrown mixture and cook it for a bit before adding the egg/cheese mixture. This step really adds extra flavor. I hope you enjoy this simple breakfast casserole. It’s a keeper.

is it okay if I only use one bag of the sausage and Potato Skillet?

Yes, it will be fine if you only use one bag of the sausage and potato skillet. Your casserole will be a little thinner, so you may need to reduce the cooking time by about 5 minutes. I would check it five minutes early and see if it needs the full cooking time or not. 

If I am using medium eggs do I still only use 8 eggs?

If you are using medium eggs I recommend adding an additional egg. This type of recipe is very forgiving though, extra egg or a little less egg will not drastically affect the outcome of the casserole.

What is a good substitute for evaporated milk?

A good substitute for evaporated milk is half and half, or equal parts heavy cream and milk.

Can I sub non-dairy milk for the evaporated milk?

If you need a non-dairy substitute for the evaporated milk you can use coconut milk (which may affect the flavor) or you can reduce almond milk or any other nut milk by about 50-60 percent. To reduce it you need to simmer it on medium heat until it evaporates by 50-60 percent. The recipe calls for 1 cup of milk so you would need to start with 2 cups of almond milk. 

Is this recipe gluten-Free?

Yes, as written it is gluten-free.

Can I make this ahead of time and reheat it?

Yes, you can do this. It is always best to cook fresh if possible but if you need to make it ahead of time, you can reheat it by covering it with foil and putting it in a 250-degree oven for 20-25 minutes or until the entire casserole is hot again.

Ingredients
  • 2 (18 ounce) packages of Jimmy Dean Sausage and Potatoes Skillet
  • ¼ cup melted butter
  • 8 eggs
  • 2 cups of cheese
  • 1 cup evaporated milk
  • 1 tsp salt
  • ¼ tsp black pepper
Instructions
  1. Preheat oven to 425 degrees.
  2. Pour the skillet packages into the bottom of a 9x13 baking dish.
  3. Drizzle the melted butter over the potato and sausage pieces.
  4. Bake at 425 degrees for 25 minutes.
  5. Remove from oven and turn oven down to 350 degrees.
  6. Whisk together the eggs, cheese, evaporated milk, salt, and pepper.
  7. Pour over the potatoes and sausage.
  8. Bake at 350 for 40 minutes.
  9. Let stand for 5-10 minutes before cutting and serving.

    I really like this kind of dish. I do live alone so I’m thinking of halving all the ingredients except for the butter. Do you think this will work?

      Yes, just put it in an 8×8 dish. You can also half the butter without a problem if you want to.
