When I was looking through an old cookbook, “Where’s My Mom Now That I Need Her?”, and came across a recipe for Gingerbread Waffles, I just had to give it a try.
AMAZING!!! Why had I never thought of how awesome gingerbread would be in waffle form? It is the PERFECT breakfast for this holiday season. The whipped cream and bananas on top complete the deliciousness.

I knew the Gingerbread Waffles would be a hit with my kids because my kids are Gingerbread Cake lovers. In fact, both of them have informed me that they want Gingerbread Cake for their birthdays this year…HA! I should have them put that in writing.
As I was cooking them, I couldn’t stop sneaking little pieces. I ended up eating a whole waffle before I was finished cooking them. They are so tasty!
how to make gingerbread waffles
- Preheat waffle iron to the setting you usually cook waffles on.
- In a mixing bowl or in a mixer, combine butter, sugar, and molasses. Mix until thoroughly combined.
- Next, add eggs and mix until incorporated, and then add milk and mix until completely combined.
- In a separate bowl, combine flour, baking powder, cinnamon, ground ginger, salt, and ground cloves or allspice. Mix all dry ingredients together and then add to molasses mixture and mix until combined.
- Spray waffle iron with cooking spray before cooking each waffle so it won’t stick. Pour approx 1/2 cup of batter in the center and cook until done.
- Remove carefully with tongs or a fork. Repeat until all waffles are cooked.
- Serve with Whipped Cream and Banana slices if desired.
- Enjoy!
Tips for making Easy Gingerbread Waffles
- I set my waffle iron between 2 and 3 to cook these waffles.
- Make sure to spray the waffle iron with cooking spray in between cooking each waffle, so that they won’t stick to the waffle iron.
- Serve with this Brown Sugar Buttermilk Syrup, or if you’re wanting even more spice in your life, pour this Spiced Buttermilk Syrup on the waffles.

Can I make a waffle batter using boxed gingerbread cake mix? If so do I need to add anything such as flour or more eggs to it?

Sorry Jane, I am not sure what it would take to convert a cake mix into a waffle mix, this recipe is really simple though, you should just try making it this way. They are so delicious!

These have great gingerbread flavor! The whipped topping is a must, though. I also enjoyed adding a sprinkle of cinnamon and sugar on top of the whipped cream. It felt like I was eating cake for breakfast and what is better than that?

If I wanted to make a dry mix of this, could I substitute dark brown sugar for the molasses?

Yes, or you could just add it when you mix up the dry mix.
