Taco Salad with Catalina Dressing {30 Minute Recipe}

Add chips and dressing and toss just prior to serving for best results. When making it for my family, I keep everything in separate bowls and then have a large bowl that I mix up everyone's portions in. That way I can still whip myself up a fresh salad the next day for lunch with the leftovers.

Ingredients
  • 2 Romaine hearts, chopped
  • 1-2 lb browned hamburger or ground turkey (I season mine with a little chili powder, garlic powder, onion powder, cumin and salt and pepper to taste...you could also add a little taco seasoning if you prefer)
  • 1-2 can's beans of your choice, drained (I use kidney, black beans or pinto beans)
  • 1 can olives, sliced
  • 2 cups shredded cheese
  • ½ cup sliced red onion or green onions
  • 2 cups chopped tomatoes, Roma or grape tomatoes work great
  • Catalina salad dressing store-bought or homemade
  • Doritos corn chips, slightly crushed
Instructions
  1. Mix everything except chips and dressing in a large salad bowl.
  2. Just prior to serving add the chips and dressing (just enough to lightly coat the salad)
  3. Toss until salad is lightly coated in dressing and serve immediately.
  4. If making individual salads:
  5. Place amount of each ingredient that you would like in a bowl large enough to toss the salad.
  6. Add dressing and chips
  7. Toss and pour out onto serving plate or just eat in the bowl if you prefer.
