A unique and irresistible muffin packed with protein and fiber. Bake them all at once or store leftover batter in the fridge to have warm muffins for breakfast for the next couple of days.

Ingredients
  • 3 cups Bran Flakes
  • 1½ cups Fiber One Cereal or Bran Buds or Grape Nuts
  • 1½ cups boiling water
  • ¾ cup canola oil or vegetable oil
  • 1½ cups granulated sugar
  • 3 eggs
  • 1 tsp vanilla
  • 3 cups buttermilk
  • 4 cups whole wheat flour
  • 3 tsp baking soda
  • ¾ tsp salt
Instructions
  1. Pour the Bran Flakes and Fiber One Cereal in a large bowl that has a tight-fitting lid. Pour the boiling water over it and stir. Let sit for 10 minutes.
  2. Add the canola oil, granulated sugar, eggs, and vanilla. Mix well.
  3. Next, add the buttermilk, and stir until completely incorporated.
  4. Finally, stir in the whole wheat flour, baking soda, and salt.
  5. At this point, you can bake a batch or you can put them in the fridge with the lid on tight and save them for when you want fresh, warm muffins.
  6. When you are ready to bake, bake them at 375 degrees for 14-15 minutes.
  7. Batter can be stored in the fridge for up to 4 weeks.
