You only need minutes to get this simple dinner on the table. Ground pork, chopped onion and garlic, a few seasonings, and some coleslaw mix- easy peasy! We like to serve it over steamed rice with some siracha drizzled on top.

Ingredients
  • 1 tbsp sesame oil +1 tbsp canola oil
  • 1 lb ground pork, turkey, or chicken
  • 1 medium onion, diced
  • 3-4 cloves of garlic, crushed
  • ½ tsp salt
  • ¼ tsp pepper
  • 2½ tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp sugar
  • ½ tsp ground ginger
  • pinch of red pepper flakes
  • 1 (16 ounce) bag coleslaw mix (if the mix doesn't have very much carrot in it, grate another carrot to add to it.)
  • 2 green onions, thinly sliced
  • Sriracha, optional (for serving)
Instructions
  1. Add the following to a large skillet: sesame oil, canola oil, ground pork, onion, garlic, salt, and pepper. Cook over medium-high heat until meat is no longer pink and onions are translucent.
  2. Add the soy sauce, rice wine vinegar, sugar, ground ginger, and red pepper flakes. Stir until meat mixture is coated with the new flavors.
  3. Pour in the coleslaw mix and cook for 3-5 minutes. Be careful not to overcook. You want the cabbage and carrots to still have a little crunch to them and not be completely softened.
  4. Sprinkle the sliced green onions over the mixture and serve over steamed rice. You can also top with a drizzle of sriracha sauce if you prefer.
