You only need minutes to get this simple dinner on the table. Ground pork, chopped onion and garlic, a few seasonings, and some coleslaw mix- easy peasy! We like to serve it over steamed rice with some siracha drizzled on top.
Add the following to a large skillet: sesame oil, canola oil, ground pork, onion, garlic, salt, and pepper. Cook over medium-high heat until meat is no longer pink and onions are translucent.
Add the soy sauce, rice wine vinegar, sugar, ground ginger, and red pepper flakes. Stir until meat mixture is coated with the new flavors.
Pour in the coleslaw mix and cook for 3-5 minutes. Be careful not to overcook. You want the cabbage and carrots to still have a little crunch to them and not be completely softened.
Sprinkle the sliced green onions over the mixture and serve over steamed rice. You can also top with a drizzle of sriracha sauce if you prefer.
Enjoy!
