Instant Pot Mashed Potatoes

Creamy dreamy mashed potatoes that take minutes to cook in the pressure cooker and can be made ahead of time, keeping you free to work on the rest of the meal. These are amazing!

Ingredients
  • 3-4 lbs of potatoes, cut into 1-inch pieces
  • 3-4 cups of water or until potatoes are almost covered
  • 1¾ tsp salt
  • ¼ cup butter
  • ½ cup buttermilk or ¼ cup sour cream
  • 2 tbsp milk (add an additional 2 tbsp if needed for consistency)
  • salt and pepper to taste
Instructions
  1. Add the cut potatoes, water, and salt to your Instant Pot insert. Secure the lid and set it to 8 minutes, high pressure.
  2. When 8 minutes of pressure cooking are up, do a quick release. (I like to put a hand towel over the release valve to catch the steam.)
  3. When the quick release is finished, remove lid and use a strainer to drain the potatoes. Return drained potatoes to the Instant Pot and add the butter, buttermilk, and milk. Use a potato masher to mash the potatoes to the consistency you desire.
  4. Serve immediately or put the lid on the Instant Pot and set it to "Keep Warm" for up to 4 hours.
  5. Serve with your favorite main dish and gravy! YUM!
