A subtle lemon flavor infused into perfectly cooked rice, this Lemon Rice is a surprisingly simple way to take your favorite dishes up a notch.
Serves: 6-8
  • 2 cups long-grain white rice
  • 1 cup chicken broth (I use 1 cup water and 1 tsp chicken bullion.)
  • 2 cups water
  • 3 tbsp freshly squeezed lemon juice
  • 1¼ tsp salt
  • ¾ tsp garlic powder
  • 3 tbsp butter
  • ½ tsp lemon zest
  1. Put all ingredients in a 2-quart saucepan that has a tight-fitting lid.
  2. Bring to a boil, turn down to a simmer, place lid on pan and cook for 18-20 minutes or until all liquid is absorbed and rice is easily fluffed with a fork.
  3. (Refrain from lifting the lid while rice is simmering.)
  4. Enjoy!
