Easy Greek Salad

Fresh grape tomatoes, cucumbers, and feta tossed together with Kalamata olives and lemon juice, red wine vinegar, and a few simple spices.

  • 2 English Cucumbers, quartered and sliced ¼ inch thick
  • 1 pint grape tomatoes
  • ½ cup pitted Kalamata olives
  • 4-6 ounces of fresh Feta Cheese
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ⅛ tsp ground black pepper
  1. In a large mixing bowl, combine all ingredients and toss until coated.
  2. Serve immediately or refrigerate until ready to serve.
  3. Store leftovers covered airtight in the fridge.
  4. Salad is freshest if consumed in 1-2 days.
