Serves: 6-8
Ingredients
2 tbsp canola oil, divided
1 lb ground beef
1 lb fresh broccoli, cut into bite size pieces
1 onion, finely chopped
2 cloves of garlic, crushed or finely chopped
2 tsp fresh ginger, finely chopped or grated
3-4 tbsp soy sauce
1½ tbsp brown sugar
1 tsp fish sauce (optional-can be substituted with oyster sauce or hoisin sauce)
1 tsp sesame oil
6-8 cups cooked white rice
5-6 eggs (You can use less. I like to add a lot for extra protein and because I have a large family.)
Instructions
In a very large skillet, add 1 tbsp canola oil, ground beef, onion, garlic, and ginger. Cook until meat is mostly browned.
Next, add broccoli, soy sauce, brown sugar, fish sauce and sesame oil. Cook until beef is completely done and broccoli pieces are tender to your liking.
While the meat and broccoli are cooking, scramble the eggs with the other 1 tbsp of canola oil in a separate pan. Don't forget to salt and pepper them. (I like to crack them into a separate bowl and whisk them before adding them to the hot pan. I also add a splash of milk into my eggs when I whisk them, but you can prepare them however you normally prepare scrambled eggs.)
When broccoli is tender and eggs are ready, add the cooked rice and eggs into the pan with the beef and broccoli and mix well. Taste and season with more soy sauce if needed.
Serve and enjoy!
