Soft and chewy oatmeal cookies with sweet white chocolate chips and slightly tart cranberries make for a delicious treat.

Ingredients
  • 1 cup butter
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups quick oats
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • ¼ tsp cinnamon (a couple of shakes)
  • 2 cups Craisins
  • 1 cup white chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper or a silpat baking mat. Set aside.
  3. With a hand mixer or stand mixer, cream together butter, brown sugar, granulated sugar, eggs, and vanilla. Mix for 5 minutes.
  4. In a separate mixing bowl, whisk together oats, flour, baking soda, baking powder, and salt.
  5. Next, slowly add the dry ingredients to the wet batter mixture. Mix until well combined. The batter will still be wet-like after combing the two mixtures.
  6. Add the Craisins and white chocolate chips and mix until combined.
  7. Using a medium cookie scoop, drop dough onto the cookie sheet two inches apart to allow room for spreading. Bake for 12-14 minutes or until cookies are golden.
  8. Let cookies cool on the baking sheet for 2 minutes before transferring them to a cooling rack.
