Serves: 6-8
Ingredients
  • 1 lb ground beef
  • 1 large onion, diced
  • 2-3 cloves garlic, crushed or finely chopped
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 cup of carrot, finely diced
  • 1 (15 ounce) can diced tomatoes
  • 1 cup long-grain rice
  • 1½ tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp brown sugar
  • ¼ tsp salt
  • ⅛ tsp ground pepper
  • 2 tsp beef bouillon
  • 2 cups water
  • 1-2 cups shredded cheddar or Colby jack cheese
Instructions
  1. In a large skillet that has a lid, brown the ground beef with the onion and garlic. (You can lightly salt and pepper this as it cooks, if desired.)
  2. Once the beef is browned, add the diced red and green peppers and the carrots. Give it a stir and let it cook for a minute or two.
  3. Next, add the diced tomatoes, rice, parsley, basil, brown sugar, beef bouillon, and water. Stir and bring to a boil.
  4. Once boiling, reduce to a simmer and put the lid on the skillet. Simmer with lid on for 20 minutes or until liquid is absorbed and rice is tender.
  5. At this point, remove the lid and stir. Remove from heat, sprinkle with cheese, and cover for 3-5 minutes or until cheese is melted.
  6. Serve immediately.
