Delicious cornbread made with buttermilk for the perfect texture! Smothered in butter and honey, it's an irresistible treat or a nice chunk of it makes the perfect companion for a bowl of chili.

Serves: 12-15 pieces
Ingredients
1 cup all-purpose flour
1 cup cornmeal (I prefer yellow)
¼ cup brown sugar, lightly packed
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
¼ cup honey
2 eggs
½ cup butter, melted
Instructions
Preheat oven to 400 degrees. Grease an 8x8 or 7x11 baking dish and set aside.
In a medium-sized mixing bowl, combine the all-purpose flour, cornmeal, and brown sugar. Stir until completely combined. You may need to use your hand to break up large pieces of brown sugar.
Next, stir in the baking powder, baking soda, and salt.
Make a well in the center of the flour mixture and pour the buttermilk, honey, and 2 eggs into the well. Use a fork to break up the yolks and mix those ingredients a little bit in the center before starting to bring the flour mixture into the center. Mix until combined.
Next, pour in the melted butter. Stir until completely combined.
Pour batter into prepared baking dish and bake at 400 degrees for 20-25 minutes or until toothpick comes out clean from the center. In my oven, it took 24 minutes.
Serve warm with butter and honey. YUM!
