Absolutely fantastic, this fresh Upside Down Peach Cake is a true treat for the taste buds. Any peach lover is going to go crazy over this delicious and simple dessert. Not to mention it is beautiful!

Ingredients
  • 4 ripe peaches, peeled and sliced
  • ½ cup salted butter, melted
  • ¾ cup brown sugar
  • ⅛ tsp ground cinnamon
  • ½ cup canola or vegetable oil
  • ½ cup butter, softened
  • 1¼ cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1¾ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • ⅛ tsp ground nutmeg
Instructions
  1. Preheat the oven to 350 degrees. Spray an 8-cup capacity circle pan with cooking spray and set aside.
  2. Melt ½ cup butter and pour it into the prepared baking dish.
  3. Place the peaches in a circular pattern on the bottom of the dish.
  4. In a small bowl, mix together the ¾ cup brown sugar and ⅛ tsp cinnamon with your fingers and sprinkle it over the peaches.
  5. In a separate mixing bowl, combine the oil, ½ cup of softened butter, and 1¼ cups granulated sugar. Mix well until creamy.
  6. Next, add the eggs and vanilla. Mix again.
  7. In another small bowl mix together the flour, baking powder, salt, baking soda, and ground nutmeg. Then add it to the egg/sugar mixture. Stir until combined.
  8. Spread batter over the brown-sugar-covered peaches, being careful not to disrupt the peach pattern.
  9. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake set for 3-5 minutes, and then carefully turn it out onto a big plate or cake stand. It's important to do this while the cake is still hot so that it will come out easily. Be careful. This is somewhat difficult to do.
  11. Once it is inverted onto the plate or cake stand, you can serve it or let it continue to cool. I prefer to serve it while still warm with ice cream. SO GOOD!
