So much fun to make and eat, these Ground Beef Baked Taquitos are packed with protein and a handheld dinner your kids (and you) will love.

Ingredients
  • 8-12 tortillas (depends on what size you use)
  • 1 lb ground beef
  • 1 large onion, diced
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 1 (15 ounce) can pinto beans (drained and rinsed) or refried beans
  • 1 taco seasoning packet
  • ½ cup (4 ounces) tomato sauce (If you make my Stove Top Rice to go with the taquitos, you can use the other 4 ounces for the rice.)
  • 1 (4 ounce) can diced green chilis
  • 2 cups shredded cheese
  • Oil or cooking spray
Instructions
  1. Preheat the oven to 400 degrees.
  2. Place the beef, the diced onion, salt, and pepper in a large nonstick skillet. Cook until the meat is nicely browned and the onions are cooked.
  3. Next, add the drained and rinsed pinto beans and use a masher to kind of squish them, leaving some of them whole.
  4. Add the taco packet, tomato sauce, and diced green chilis. Mix until well combined, and then let the mixture simmer for about 5 minutes.
  5. Next, spray a baking sheet with cooking spray.
  6. To make the taquitos, place a small amount of cheese across a tortilla, scoop ¼ cup or so of the filling over the cheese (see pictures), and then roll the tortilla nice and tight. Place seam-side down on the prepared baking sheet. Repeat until all of the cheese and meat mixture are gone.
  7. Before baking, generously spray the top of the taquitos with cooking spray or use a basting brush to brush them lightly with canola or vegetable oil.
  8. Bake at 400 degrees for 20-25 minutes or until taquitos are nicely browned. If desired, you can turn them over and place them under the broiler for a minute at the end to crisp up the bottom side.
  9. Dip in your favorite sides, like sour cream, salsa, or guacamole.
  10. Enjoy!
