One bite and you'll see why this comforting and filling dinner is named Cowboy Stew. It's chock-full of protein, fiber, and veggies--a perfect make-ahead meal for those busy and cold winter nights.

Ingredients
  • 1 lb ground beef
  • 1½ tsp salt
  • ½ tsp black pepper
  • 1 large onion, diced
  • 1 jalapeño, seeded and chopped
  • 1 package Kielbasa, sliced
  • 2-3 segments of garlic, crushed
  • 3 stalks celery, sliced
  • 4-5 large carrots, peeled and sliced
  • 4-5 medium potatoes, diced
  • 1 cup frozen peas
  • 1 (15 ounce) can corn, drained
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes (Can use fire-roasted if desired.)
  • 1 (10 ounce) can Rotel
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups water
  • 1 (15 ounce) can green beans, drained
Instructions
  1. In a large 5- 6-quart Cast Iron Roaster or soup pot, saute the hamburger, onion, salt, pepper, and jalapeño until the beef is browned and onions are translucent.
  2. Add the kielbasa and garlic, and sauté for another minute or two.
  3. Next, add the carrots, celery, potatoes, corn, peas, kidney beans, pinto beans, Rotel, diced tomatoes, green beans, cumin, and chili powder.
  4. Now add 4 cups of water and stir. If the water level doesn't come up to the top of the meat and veggies, add a little more until it does.
  5. Bring to a boil, stir well, and turn the heat down to a simmer and allow the stew to simmer for 30-45 minutes or until the potatoes and carrots are nice and tender.
  6. Taste and adjust salt and pepper if necessary.
  7. Serve with a side of bread or rolls.
