These high-protein, delicious breakfast burritos are filled with eggs, potatoes, ham, and cheese. The potatoes are cooked with diced onion to add another layer of flavor. They are so good. You're going to absolutely love these burritos.
Next, crack all the eggs into a mixing bowl. Add the milk and ¼ tsp salt and a few shakes of black pepper. Use a whisk to mix everything together until all yolks are broken and mixed.
In another skillet, add 1 tbsp canola oil or butter and heat over medium-low heat. When the pan is hot and the butter is melted, pour the egg mixture in. Stir often paying close attention to the edges and bottom of the pan. Cook and scramble the eggs until they are done.
Combine the eggs with the potato/ham mixture.
Warm up the tortillas. (I leave the tortillas in the package unopened and put it in the microwave for 1 minute.)
Put a few tablespoons of cheese in the center of a tortilla, add 1/12 of the egg mixture on top of the cheese, and fold the burrito. If not serving immediately, wrap in foil to keep warm or plastic wrap to freeze.
Enjoy!
If you plan to freeze them, make sure you put the wrapped burritos inside of a Ziplock bag to keep them extra fresh.
You can also put burritos wrapped in foil in a crockpot on warm to keep warm until ready to serve.
