A delicious and flavorful soup made from your leftover Holiday Ham Bone. Such a great soup that the whole family will love. Bonus: it's extra healthy because it's full of the superfood, lentils.

Recipe type: Soup/Ham/Lentils
Serves: 10-12
Ingredients
1 ham bone, preferably with some ham still on it
2 tbsp olive oil
3-4 large carrots, sliced or diced
4-5 stalks of celery, sliced
1 large onion, diced
1 segment of garlic, crushed
10-12 cups water
1 (15 ounce) can diced tomatoes
½ tsp dried basil
¼ tsp dried thyme
¼ tsp dried oregano
1 tbsp dried parsley
1 bay leaf
1 lb lentils
1½ tbsp chicken bouillon (May need more depending on how salty your ham/ham bone is. Taste it and add as needed.)
Next, add the can of diced tomatoes, basil, oregano, thyme, parsley, bay leaf, and chicken bouillon.
Add the lentils and ham bone, and then the water.
Bring it to a boil. Boil for 25-30 minutes or until the lentils are soft and tender. (This is the kind of soup you can let simmer all day, if you want, but if you are in a hurry, you can speed it up.)
When lentils are tender, remove the bone and shred off any ham that you can.
