A classic cake just like your mom or grandma used to make with crunchy carmelized pecans and sweet and tangy pineapple, making it deliciously moist and tender.

Ingredients
  • Cake:
  • 1½ cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 1 (20 oz.) can of crushed pineapple, including juice
  • ½ cup light brown sugar, packed
  • ¼ cup chopped pecans
  • Glaze Topping:
  • ½ cup butter
  • ½ cup granulated sugar
  • 1 cup evaporated milk
  • 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees.
  2. Spray a 9x13 baking dish with cooking spray. Set aside.
  3. In a large mixing bowl, whisk together the granulated sugar, all-purpose flour, baking soda, and salt.
  4. Next, add the eggs and the crushed pineapple, including the juice. Mix the ingredients together until well combined. Pour the batter into the prepared 9x13 dish.
  5. In a small mixing bowl, combine the brown sugar and the chopped pecans, and then evenly sprinkle it over the top of the cake batter.
  6. Place in the 350-degree oven and bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
  7. Next, prepare the topping during the last 5-10 minutes of baking to have it ready for when the cake is removed from the oven.
  8. In a medium saucepan add the butter, granulated sugar, evaporated milk, and vanilla extract. Bring to a rolling boil over medium-high heat, stirring constantly. Once the topping reaches a rolling boil, remove from heat and immediately pour it over the hot cake.
  9. Let the cake cool for 30 minutes and serve warm, or you can let it completely cool while the glaze continues to soak into the cake.
  10. Store leftover cake covered on the counter or in the refrigerator for up to 3-4 days.
