Almond Joy Baked Oatmeal

¾ cup granulated sugar ½ cup coconut oil, melted 2 eggs 1 cup milk 1 tsp vanilla extract 1 tbsp baking powder ½ tsp salt 3 cups quick oats ¼ cup sliced or chopped almonds ½ cup shredded coconut 2 tbsp brown sugar ½ cup chocolate chips First, add the granulated sugar and melted coconut oil together in a medium-sized bowl. Mix well. Beat in the eggs, and then add the milk, vanilla, baking powder, and salt. Stir until well blended. Then add the oatmeal. Mix well. Next, add the sliced almonds and shredded coconut. Stir until well blended. Spray a large pie pan or an 8x8 or 9x9 glass baking dish with cooking spray. Next, pour the oatmeal mixture into the prepared dish and sprinkle the top with 2 tbsp of brown sugar and ½ cup chocolate chips. Cover and refrigerate overnight or for at least three hours.
