Slow Cooker Green Curry with Chicken and Potatoes

Tender chicken and potatoes flavored with green chiles and spices cooked in coconut milk and served over basmati rice come together for an easy and delicious weeknight dinner.

Ingredients
  • 2 large chicken breasts, cut into bite-size pieces
  • 1-3 potatoes, thinly sliced or quartered (approx. 1 cup)
  • 1 small onion, thinly sliced or chopped (approx. ½ cup)
  • 1 tsp salt
  • ⅛ tsp pepper
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 (14 ounce) can coconut milk
  • 1 (4 ounce) can green chiles
  • steamed basmati rice
Instructions
  1. Place the chicken pieces in the slow cooker.
  2. Next, layer the sliced potatoes on top of the chicken pieces, and then add the sliced onions.
  3. Sprinkle the salt, pepper, curry powder, cumin, and garam masala on top of the onions.
  4. Add the green chiles, and then pour the coconut milk over all the layers.
  5. Place the lid on the slow cooker and cook for 4 hours on high or 6 hours on low.
  6. Serve over basmati rice.
  7. Enjoy!
