Made with oats, cocoa, peanut butter, and honey, these energy balls taste similar to No-Bake Cookies. They are so yummy you will think you are eating an indulgent cookie and not a healthy treat.

Ingredients
3 cups old-fashioned oatmeal
1 cup flax seed meal
6 tbsp cocoa powder
¾ tsp salt
1 cup honey
1 tsp vanilla extract
½ cup peanut butter
½ cup coconut oil, melted
Instructions
Blend the oatmeal in a food processor until the oats have broken down. (See step-by-step photos.)
Add the blended oatmeal, flax seed meal, cocoa powder, salt, honey, vanilla extract, and peanut butter in a large bowl. Set aside.
In a microwave-safe bowl, melt the coconut oil.
Pour the melted coconut oil directly over the cocoa powder in the bowl. (The melted coconut activates the cocoa powder and gives it a deeper flavor.)
Next, mix thoroughly all the ingredients together.
Use a small cookie scoop to scoop out the mixture, and then use your hands to roll it into a ball.
Place the rolled energy bites on a cookie sheet lined with parchment paper, making sure they do not touch.
Once all the energy bites have been formed, place them in the freezer. When they have completely frozen, transfer the energy bites to a Ziploc freezer bag and store them in the freezer.
