Cilantro Ranch Protein Dip

Loaded with cottage cheese, avocado and cilantro, this dip is not only delicious but nutrient-dense. It's so full of protein that ½ cup served with veggies is a quick and easy lunch.

Serves: 4 cups
Ingredients
  • 3 cups cottage cheese
  • 1 avocado, removed from the skin and seeded
  • 1 cup cilantro (I rip the top part of the bunch off and call it good. I think the stems are too strong.)
  • 2 jalapeƱos, seeded
  • 2 garlic cloves, crushed
  • 1 packet of Ranch dip mix
  • Juice of one lemon
  • ⅛ tsp ground black pepper or to taste
  • Corn chips, crackers, or veggies for serving
Instructions
  1. Combine all ingredients in a food processor or a very strong blender like a Vitamix.
  2. Mix on high until all ingredients are completely blended and smooth.
  3. Serve with corn chips, your favorite crackers, or a veggie tray.
  4. Refrigerate in an airtight container for up to 10 days.
  5. Enjoy!
