Naturally sweet bananas and chewy oats slightly spiced with cinnamon and nutmeg make these cookies irresistible.

Ingredients
  • 1½ cups sifted all-purpose flour
  • 1 cup granulated sugar
  • ½ tsp baking soda
  • 1 tsp salt
  • ¼ tsp nutmeg
  • ¾ tsp cinnamon
  • ¾ cup vegetable shortening
  • 1 egg, well beaten
  • 2-3 bananas, mashed
  • 1¾ cups old-fashioned oats
  • 2 cups chocolate chips
Instructions
  1. Preheat the oven to 375 degrees.
  2. Line a cookie sheet with a silicone baking mat or parchment paper and set aside.
  3. In a large mixing bowl, whisk together the sifted flour, sugar, baking soda, salt, nutmeg, and cinnamon.
  4. Next, add the shortening and use a pastry cutter to cut it into the flour mixture until it is crumbly. (See step-by-step photos above.)
  5. Mash the bananas.
  6. With a handheld mixer, mix in the beaten egg, mashed bananas, and old-fashioned oats until thoroughly blended. Stir in the chocolate chips until incorporated throughout.
  7. Next, using a medium cookie scoop, drop dough 2 inches apart on the prepared cookie sheet to allow for spreading.
  8. Bake at 375 degrees for 13-15 minutes until the edges and the tops are a little brown.
  9. Let cookies cool on the baking sheet for 2 minutes, and then transfer them to a cooling rack.
