Easy Slow Cooker Chicken Curry

Just add the chicken, curry sauce, coconut milk, and veggies to the slow cooker and let it work its magic. It couldn't be any easier.

Ingredients
  • 11 oz bottle of your choice of curry sauce
  • 1 (13.5-ounce) can of coconut milk
  • 12 oz bag of frozen stir-fry vegetables
  • 1-2 lbs boneless chicken thighs or breasts, thawed or frozen
  • Basmati Rice or Coconut Rice
  • Cilantro (optional)
Instructions
  1. Add the chicken, curry sauce, coconut milk, and frozen vegetables to the slow cooker.
  2. Cook on high for 4 hours or low for 6 hours.
  3. Next, shred or cube the chicken and place it back in the slow cooker.
  4. Serve over basmati rice or Coconut Rice and garnish with cilantro if desired.
  5. Enjoy!
