Recipe type: Soup/Dinner
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 garlic cloves, crushed or chopped
- 4 medium potatoes, cubed
- 1.5 to 2 lbs ground beef
- 1 tsp dried basil
- 2 tsp parsley flakes
- ¼ tsp ground mustard
- 5-6 cups chicken broth or stock
- ½ cup all-purpose flour
- ½ cup butter
- 3-4 cups whole or 2% milk
- ½-3/4 cup heavy cream
- 1½-2 tsp salt, divided
- ½ tsp pepper, divided
- ⅓-1/2 cup sour cream
- 3 cups shredded cheddar cheese (Freshly grated is best.)
- In a large pot, cook the ground beef and salt and pepper to taste. Remove from the pot and set aside.
- Next, add diced carrots, onion, and celery to the pot and sauté for 1 minute.
- Stir in the crushed garlic cloves and sauté until fragrant.
- Add the cubed potatoes, chicken broth, dried basil, parsley flakes, and ground mustard. Simmer until potatoes are done.
- In a separate medium-sized pot, make a roux with the butter, flour and milk.
- Whisk the roux into the soup mixture, and then add the cooked ground beef.
- Next, add the heavy cream and sour cream to the soup mixture and stir until combined.
- Bring to a soft simmer, and stir in the shredded cheddar cheese 1 cup at a time.
- Add salt and pepper to taste.
- Serve with croutons, rolls, or bread.
- Enjoy!
