Next, using a stand mixer or handheld mixer, cream the softened butter and softened cream cheese together until combined.
Add the sugar and mix until well combined.
Next, add the egg, almond extract, and vanilla extract, and mix until well combined.
Add the flour, baking soda, and baking powder. Mix for approximately 1 minute or until completely combined.
Spread the dough evenly onto the prepared cookie sheet. I like to use a sandwich baggie over my hand to evenly press it down. Spray the sandwich baggie with cooking spray, if necessary. (See step-by-step photos.)
Bake at 350 degrees for 30-35 minutes, or until a toothpick inserted in the middle comes out clean and the center is set. The top will be golden brown.
Let cool completely.
Frosting:
Mix butter and cream cheese with a stand mixer or handheld mixer until combined.
Next, mix powdered sugar, vanilla extract, a few drops of almond extract, and milk until nice and smooth.
Frost the cookie cake when it is completely cooled. I like to use the back of a spoon to frost it. (See step-by-step photos.)
