Healthy Peanut Butter Balls

A healthy peanut butter chocolate treat perfect for curbing your sweet tooth without all the added sugar.

Ingredients
  • 1 cup powdered peanut butter
  • ½ cup almond flour
  • ½ cup unsweetened applesauce
  • ¾-1 cup semi-sweet chocolate chips
  • 1 tsp coconut oil
Instructions
  1. Line a cookie sheet with parchment paper and set aside.
  2. In a small mixing bowl, add the powdered peanut butter, almond flour, and unsweetened applesauce. Mix until well combined.
  3. Shape the peanut butter mixture into tiny balls (use 1 tablespoon or smaller for each one), and place them on the lined baking sheet. Put the peanut butter balls in the freezer for 30 minutes.
  4. Next, melt the chocolate chips and coconut oil in a microwave-safe bowl or with a double boiler. For the microwave, start with 20 seconds and then stir the chocolate chips. Continue melting the chocolate in 20-second increments, stirring after each increment until the chocolate is melted.
  5. Dip each peanut butter ball into the melted chocolate, using a spoon or fork to scoop it back out. Transfer the dipped peanut butter balls back onto the lined baking sheet, and put them in the freezer for 30 minutes or the refrigerator for 1 hour to help set the chocolate.
  6. Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to a month.
