Banana Pudding with Chessmen Cookies

A delicious no-bake dessert with layers of crunchy butter cookies, fresh bananas, and a smooth and creamy banana pudding. It is simple and easy to make, yet fancy and gorgeous.

Ingredients
  • 1 (5.1-ounce) instant banana pudding mix
  • 1 (12-ounce) can of evaporated milk, chilled
  • 1 (14-ounce) can of sweetened condensed milk
  • 1 (8-ounce) package of cream cheese, softened
  • 1 tsp vanilla extract
  • ½ cup powdered sugar
  • 1½ cups heavy whipping cream
  • 2 (7.25-ounce) Pepperidge Farm Chessmen Butter Cookies
  • 6 large bananas
Instructions
  1. In a medium-sized mixing bowl with a handheld mixer, cream together the instant banana pudding and the chilled evaporated milk until it has thickened (approximately 2 minutes).
  2. Add the sweetened condensed milk and mix until well combined. Cover with plastic wrap and refrigerate.
  3. Next, in a medium-sized mixing bowl, add the cream cheese. With a handheld mixer, mix the cream cheese until it is smooth.
  4. Add the powdered sugar and vanilla extract and mix until thoroughly smooth.
  5. Slowly pour in the heavy cream while the handheld mixer is on slow speed. Once the mixture is combined, continue to beat on high speed until stiff peaks form.
  6. With a rubber spatula, gently fold in the pudding mixture into the cream cheese mixture until combined, being careful not to overmix. Set aside.
  7. Next, in a 9x13 baking dish, evenly layer the Chessmen cookies on the bottom of the dish.
  8. Slice the bananas. Place a single layer of bananas on top of the cookies.
  9. Evenly spread half of the pudding-cream-cheese mixture on top of the bananas.
  10. Next, add another single layer of bananas, and evenly spread the rest of the pudding-cream-cheese mixture on top.
  11. Evenly place the Chessmen cookies over the top.
  12. Place in the refrigerator and chill for at least 4 hours before serving or overnight.
  13. Store leftovers in the refrigerator for up to 2-3 days.
