Pumpkin Pie German Pancakes

A fun fall-inspired twist on German Pancakes. Drizzle with Maple Syrup for a perfect fall breakfast.

Ingredients
  • 6 eggs
  • 1 cup milk
  • ½ cup canned pumpkin
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • pinch of nutmeg
  • ⅛ tsp salt
  • 4 tbsp butter
  • powdered sugar for dusting
Instructions
  1. Preheat oven to 425 degrees.
  2. Decide which type of pan you want to use. You will need two 9-inch cake pans or one 9x13 pan.
  3. Divide the butter and put two tablespoons of butter in each 9-inch round cake pan or put all four tablespoons in a 9x13 pan.
  4. Place pan(s) in the oven until butter is melted. Remove from oven.
  5. In a medium-sized mixing bowl combine eggs, milk, pumpkin, flour, cinnamon, ginger, nutmeg, and salt. Use a whisk to mix until very well combined.
  6. Next, pour half of the mixture into each cake pan or all of the mixture into a 9x13 pan.
  7. Bake in a 425-degree oven for 18-20 minutes.
  8. Remove and dust with powdered sugar.
  9. Can also serve with syrup or whipping cream if desired.
