Chewy Oatmeal Raisin Cookies

Old fashioned chewy oatmeal raisin cookies. The dough is crazy good and the cookies are pretty great too. Perfect cookie to send in your kids school lunches.

  • 1 cup softened butter, I prefer salted
  • 1¼ cup light brown sugar, do not pack
  • 2 large eggs
  • 1 tbsp Vanilla
  • 1 tsp baking soda
  • 1½ teaspoons cinnamon,
  • ¼ tsp salt, ½ tsp if you use unsalted butter
  • 1½ cups flour, I used 1 cup whole Wheat and ½ cup all purpose
  • 3 cups old fashioned oats
  • 1 cup raisins, (you can soak them in boiling water to plump them if you like, but I didn't bother with this step)
  1. In a mixer cream the butter, and brown sugar, add the eggs and vanilla and continue mixing until well combined
  2. Add baking soda, cinnamon, and salt, Mix well
  3. Add flour, and Oatmeal and continue to mix, Add raisins in as the flour and oatmeal mix together.
  4. Refrigerate dough for up to 30 minutes before cooking if desired.
  5. Use a cookie scoop to drop dough onto greased cookies sheets. (or Roll dough into small dough balls with your hands) Place dough balls 2 inches apart on baking sheet.
  6. Bake at 350 degrees for 9-10 minutes or until cookies are just starting to brown on the edges, they will look slightly doughy in the center. That is how they should look, Take them out and allow them to sit on the baking dish for a couple minutes before transferring to cooling rack.
