Serves: 24
Ingredients
¾ cup butter, softened
¾ cup brown sugar
½ cup sugar
3 eggs
½ tsp salt (I like coarse sea salt)
1¾ cup peanut butter, I use creamy
2 tsp vanilla
1¼ tsp baking soda
1 cup flour
¾ cup quick oats
For filling : 12 ounce pkg milk chocolate chips
3 tbsp butter
1 can sweet and condensed milk
2 tsp vanilla
Instructions
Preheat oven to 350 degrees
Lightly grease a large cookie sheet
In your mixer combine softened butter and the brown and white sugars. Cream together
Add eggs and mix until combined,
Add salt, peanut butter and vanilla, mix until combined
Add baking soda, flour and oatmeal and mix until combined
Evenly spread ⅔-3/4 of the peanut butter mixture onto the lightly greased cookie sheet (this can be a little tricky. I put my hand inside of a plastic bag and press it down gently if I am having a hard time making it even with a spoon or knife. It will be a very thin layer of dough.
In the microwave or on the stove top, slowly and carefully melt the chocolate chips, butter and sweet and condensed milk together. Once it is melted and combined stir in the vanilla.
Spread the chocolate mixture evenly over the thin layer of peanut butter bar dough in the cookie sheet.
With a spoon or your fingers, evenly dollop the remaining dough over the chocolate mixture (see picture below)
Bake at 350 degrees for approximately 20-25 minutes or until dough is set and just slightly starting to brown.
