Zucchini Chocolate Chip Snack Cake

  • ⅓ cup vanilla or plain yogurt
  • 3 tbsp butter, softened
  • ½ cup brown sugar, lightly packed
  • ¼ cup granulated sugar
  • 2 eggs
  • 1 cup shredded zucchini
  • ¾ cup quick oats
  • 1¼ cup whole wheat flour
  • 2 tsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt, scant
  • ½ cup semi-sweet chocolate chips, heaping
  1. Preheat oven to 325 degrees
  2. Spray a 9x13 pan with cooking spray and set aside
  3. Combine yogurt, butter, brown sugar and granulated sugar, mix well with a hand mixer or in your mixer for 1 minute or until thoroughly combined.
  4. Add eggs and mix until thoroughly incorporated.
  5. Add shredded zucchini and quick oats. Stir and let sit for 5-10 minutes (this gives the zucchini a chance to seep and a chance for the quick oats to absorb moisture.
  6. Mix in the flour, cinnamon, baking soda, baking powder and salt until evenly combined.
  7. Stir in chocolate chips and spread evenly in the greased 9x13 pan.
  8. Bake at 325 degrees for 20-23 minutes or until toothpick comes out clean.
