Family Size Barbecue Chicken Tin Foil Dinner

Cooking these yummy veggies and chicken in tin foil seals in the juices and flavor creating a delicious simple dinner reminiscent to one cooked over a camp fire.

Ingredients
  • 1½ lbs chicken cut into small pieces
  • 5-6 medium sized red potatoes, sliced thinly
  • 1 large onion, sliced thinly
  • 1-2 stalks celery, sliced
  • 1 small green pepper, diced
  • 30-40 baby carrots, cut in fourths or fifths
  • 2 cups green beans. frozen or fresh
  • 1 cup of your favorite barbecue sauce + ⅓ cup water thoroughly mixed together
  • salt and pepper
  • 2 tbsp olive oil or (butter, cut in small pieces)
Instructions
  1. Preheat oven to 350 degrees.
  2. Put two 3 feet pieces of tin foil down side by side in a 9x13 pan. Put another large sheet over them horizontally, see picture above in post.
  3. spray the foil (where the food will be placed) with a light coating of cooking spray, sprinkle it with salt and pepper and drizzle a little of the thinned barbecue sauce over it.
  4. Start by putting ⅓ of the onion, celery and green pepper down, add ⅓ of the potatoes, carrots and green beans. Salt and pepper generously. Next add ⅓ of the chicken and drizzle with ⅓ of the remaining barbecue sauce. Repeat layers until ingredients are all used. Don't forget to generously salt and pepper as you go.
  5. Drizzle olive oil or put butter pieces on top layer
  6. Take the two ends of the horizontal piece of foil and bring them together and tightly fold/roll the foil down until it is tightly touching the ingredients. Do the same with the two pieces of foil (see picture above in post)
  7. Make sure it is sealed tightly and place in 350 degree oven for two hours or until everything is cooked through and tender.
