Chocolate Zucchini Muffins

Breakfast, snack, or dessert. These muffins are fudgy and delicious and highly addictive. But it's okay, they have zucchini in them....right?

  • 2 cups sugar, divided
  • ½ cup cocoa powder
  • ½ cup butter
  • ½ cup oil
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • 3 cups flour
  • 2 cups shredded zucchini
  • 1 cup chocolate chips
  1. Preheat oven to 350 degrees.
  2. Prepare muffin tins with liners or cooking spray. Set aside.
  3. In a microwave-safe bowl, mix cocoa powder and ½ cup sugar until combined. Add butter and microwave for 30-60 seconds until butter melts. Stir well.
  4. Pour into mixing bowl or stand mixer bowl. Add the rest of the sugar (1½ cups), oil, eggs, and vanilla. Mix well.
  5. Add baking soda, baking powder, salt, cinnamon, and flour. Mix until combined.
  6. Next, add shredded zucchini and mix (15-seconds) until combined. Add chocolate chips and mix (15 seconds) them through.
  7. Fill muffin tins with batter ⅔ full and bake at 350 degrees for 20-25 minutes or until toothpick comes out clean from center.
  8. Remove muffins from tins and let cool on a cooling rack.
  9. Enjoy!
