No Bake Chocolate and Peanut Butter Energy Bites

Chewy, Crunchy, sweet energy bites packed with protein and fiber and held together by a delicious chocolate and peanut butter mixture.

Ingredients
  • ½ cup honey or brown rice syrup or a mixture of both. Using all honey makes them very sweet.
  • ½ cup peanut butter
  • 1 tbsp coconut oil
  • 2 tbsp cocoa powder
  • pinch of salt
  • 2½ cups Kashi GoLean or Kashi Vanila Pepita or Uncle Sam's Cereal (*note: if you choose to add all of the optional ingredients cut down amount of cereal to 2¼ cups)
  • 2 tbsp chia seeds (Optional)
  • ¼ cup peanuts (optional)
  • ¼ cup sunflower seeds (optional)
Instructions
  1. Cover a cookie sheet with wax paper and set aside.
  2. Mix cereal, chia seeds, peanuts, and sunflower seeds in a medium size mixing bowl and set aside.
  3. In a saucepan combine the peanut butter, and honey/brown rice syrup and coconut oil. Heat them (stirring) until combined and warm.
  4. Remove from heat and mix in salt and cocoa powder. Pour well combined mixture into the bowl with the cereal mixture and stir until well combined.
  5. Let cool for 3-5 minutes.
  6. Using a plastic glove or plastic baggie over your hand. Scoop 2 tbsp of mixture (I use a cookie scoop for this) into your gloved hand and squeeze it into a ball (or as close as you can get it to a ball) Set it down on the wax paper covered cookie sheet that you prepared earlier.
  7. Repeat until all of the energy bite mixture has been used.
  8. Transfer cookie sheet into the fridge and let them set up for 30-45 minutes. Once the energy bites are set up they can be stored in a ziploc bag or airtight container.
  9. I prefer to keep mine in the fridge, but it is not necessary.
