Delicious, soft, and chewy lemon cookies with a sweet and tart glaze on top. Perfect for a special treat, baby showers, and bridal showers. Who doesn't love a little lemon dessert?

Ingredients
  • 1 cup butter, softened
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 eggs
  • 4 tbsp fresh lemon juice, divided (2 tbsp for cookie dough, 2 tbsp for glaze)
  • zest of one lemon
  • 3⅓ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup powdered sugar for rolling
  • 1 cup of powdered sugar for the glaze
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper or spray with non-stick cooking spray. Set aside.
  3. Cream butter, sugar, eggs, vanilla, lemon zest, and 2 tbsp lemon juice in a stand mixer or with a hand mixer.
  4. Add flour, baking powder, baking soda, and salt. Mix until well incorporated.
  5. Use a 2 tbsp cookie scoop to scoop dough out and form into balls. Roll the balls of dough in powdered sugar and set two inches apart on the prepared cookie sheet.
  6. Bake for 9-11 minutes. Let cookies sit on cookie sheet for a minute or two after removing them from the oven before transferring to a cooling rack.
  7. After cookies have cooled, mix up the glaze by adding 2 tbsp of lemon juice to 1 cup of powdered sugar. Whisk until there are no lumps.
  8. Next, spoon a small amount onto each cookie and spread it around. Let set and then enjoy!
  9. Store cookies in an airtight container.
