Turkey Zucchini Porcupine Meatballs

Healthy, fun porcupine meatballs. Made with ground turkey and grated zucchini. An easy way to get more veggies in your kids.

Ingredients
  • 1½ lbs of ground turkey
  • 1-1½ cups finely shredded zucchini
  • 1 egg
  • ½ cup uncooked long-grain rice
  • ¼ cup finely chopped onion
  • 1 tbsp dried parsley
  • ½ tsp salt
  • ⅛ tsp ground pepper
  • 2½ cups chicken stock or chicken broth
Instructions
  1. In a medium mixing bowl, combine ground turkey, shredded zucchini, rice, egg, chopped onion, parsley, salt, and pepper. Mix well.
  2. Form mixture into golf-ball-size meatballs. Place meatballs evenly spaced in a glass 9x13 baking dish.
  3. Pour chicken stock over the meatballs and cover tightly with foil.
  4. Bake at 350 degrees for one hour.
  5. Serve with rice or pasta.
  6. Enjoy!
