Turkey Zucchini Porcupine Meatballs

- 1½ lbs of ground turkey
- 1-1½ cups finely shredded zucchini
- 1 egg
- ½ cup uncooked long-grain rice
- ¼ cup finely chopped onion
- 1 tbsp dried parsley
- ½ tsp salt
- ⅛ tsp ground pepper
- 2½ cups chicken stock or chicken broth
- In a medium mixing bowl, combine ground turkey, shredded zucchini, rice, egg, chopped onion, parsley, salt, and pepper. Mix well.
- Form mixture into golf-ball-size meatballs. Place meatballs evenly spaced in a glass 9x13 baking dish.
- Pour chicken stock over the meatballs and cover tightly with foil.
- Bake at 350 degrees for one hour.
- Serve with rice or pasta.
