Delicious and Healthy! This muffins not only have the perfect flavor but the perfect texture. A sure favorite for the whole family, but especially perfect for after-school snacks or quick on the go breakfasts.

Ingredients
  • ½ cup butter, softened
  • ½ cup vanilla yogurt
  • 1 cup granulated white sugar
  • 1 cup brown sugar, do not pack
  • 3 eggs
  • 1 tsp vanilla
  • 3 cups flour (can use 1 cup of whole wheat if desired)
  • 3 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 2 cups grated zucchini
  • ½-1 cup mini semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees
  2. Prepare muffin tins with liners, and set aside. If you do not have liners, spray the inside of each muffin cup of the tin with cooking spray.
  3. In a stand mixer, or with a hand mixer, cream together the butter, yogurt, sugars, eggs and vanilla.
  4. Add flour, cinnamon, salt, baking soda and baking powder. Mix well, until almost combined, add zucchini and mix again until completely mixed and smooth.
  5. Stir in chocolate chips.
  6. Fill each muffin liner ⅔ full.
  7. Bake at 350 degrees for 20-25 minutes until toothpick comes out clean from the center, or until center feels firm when pressed gently with your finger.
  8. When muffins are done, remove them carefully from tins and place on a cooling rack.
