Egg and Spaghetti Soup {Poor Man's Soup}

I got this soup Idea from a friend and RLD reader. She doesn't add the shredded carrot, but I did because I wasn't planning on serving any other vegetables tonight. She said she likes to serve it with a salad. We had pumpkin rolls.

Serves: 6
Ingredients
  • 1 large onion, finely diced
  • 1 large carrot, finely shredded
  • ¼ cup butter
  • Salt to tast (about 2-3 tsp}
  • ⅛-1/4 tsp pepper
  • 8-10 cups water
  • 8 ounces raw spaghetti noodles
  • 5 eggs, beaten
  • 1 cup Parmesan cheese
  • 1 tbsp parsley
Instructions
  1. Saute onion and carrot with 1 tsp salt and ⅛ tsp pepper in butter for 3-4 minutes or until onion is transparent
  2. Add 8 cups water
  3. Add 1 more tsp salt and bring to a boil
  4. Add pasta when soup is boiling, (break pasta into 2½ inch pieces as you are throwing it in)
  5. Boil for 8 minutes
  6. Add more water if it is not as soup as you would prefer once noodles have expanded, if you add more water bring back to a boil before adding the egg
  7. pour in eggs as you stir to break them up
  8. add parsley and Parmesan cheese
  9. Taste and add salt and pepper to your liking.
