Oatmeal Chocolate Fudge Bars

Thick, chewy, delicious chocolate fudge center in a buttery oatmeal cookie bar. One of the best combinations on earth!

  • 1 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2½ cups flour
  • 3 cups oatmeal (quick or old-fashioned)
  • 1 tsp baking soda
  • ½ tsp coarse sea salt

  • 1 (14 oz) can sweet and condensed milk
  • 1 (12 oz) bag chocolate chips
  • ¼ cup butter
  • 2 tsp vanilla
  1. Preheat oven to 350 degrees.
  2. Spray a 15x10 cookie sheet with cooking spray and set aside
  3. In a stand mixer or with a hand mixer, cream together, softened butter and brown sugar for one minute. Add eggs and vanilla and mix one more minute or until well combined.
  4. Add flour, oats, baking soda, and salt and mix until combined.
  5. Spread ⅔ of the oatmeal cookie mixture into the bottom of the prepared cookie sheet. Reserve remaining ⅓ and set aside.
  6. In a small sauce pan, heat condensed milk, chocolate chips and butter over low heat until melted. Stir continually. Once chocolate mixture is melted, add vanilla and pour out onto the oatmeal cookie mixture you pressed into the cookie sheet.
  7. Crumble the remaining ⅓ of the oatmeal mixture evenly over the top of the fudge layer.
  8. Bake at 350 degrees for 25-30 minutes or until edges are just starting to brown.
