Easiest, BEST Ice Cream Cake Ever

The perfect Easiest, Best Ice Cream Cake EVER! So simple, so good, and so cheap to make! You won't believe it!

  • 36 sandwich cookies (see picture above) 18 vanilla and 18 chocolate, divided
  • ½ cup butter, melted
  • 1.5 quart container of ice cream (we use cookies and cream)
  • 1 (8 oz) container of whipped topping
  • Chocolate syrup (optional, for drizzling over pieces when serving)
  1. Place 32 cookies, half vanilla and half chocolate, in a food processor and process until tiny crumbs. (Reserve the 4 other cookies to chop and sprinkle on top of the finished ice cream cake.)
  2. If you do not have a food processor, you can place cookies in a Ziploc bag and crush them with a rolling pin.
  3. Pour the melted butter into the crushed cookies and pulse or mix until butter is evenly distributed in the cookie crumbs.
  4. Pour buttered cookie crumbs into a glass 9x13 dish and press down evenly over the bottom of the pan. Make sure to really pack it down, so it won't pull up when you are adding the ice cream. I stick my hand in a sandwich baggie when I do this to cut down on messiness.
  5. Scoop ice cream onto crust. Try to get it as evenly distributed as possible. Another way to do it is to take the container off the ice cream and cut it into even 1-inch slices and lay the slices on the crust. Either way, use the back of a spoon or your hand inside of a plastic bag to even out the ice cream by pressing and spreading it to fill in any holes.
  6. Once you have the ice cream evened out, spread the whipped topping evenly over the ice cream.
  7. Next, chop the remaining four cookies and sprinkle them onto the whipped topping.
  8. That's it! You're done. Now just cover it tightly with a lid, plastic wrap, or foil and freeze for at least 3-4 hours or longer.
  9. Remove from freezer 20-30 minutes before serving.
  10. Drizzle chocolate sauce over individual pieces if desired when serving.
  11. Enjoy!
