Instant Pot Beef Stroganoff

Tender Beef and mushrooms tossed in creamy pasta. Only cooks for 4 minutes in the instant pot and is full of amazing flavor!

Serves: 8 servings
  • 2 tsp olive oil
  • 1-2 lbs top sirloin steak, cut into thin one inch pieces
  • 8 ounces of mushrooms, sliced
  • 1 medium onion, small diced
  • 1 lb rotini pasta, uncooked
  • 2 cups water
  • 1 cup beef broth
  • ½ tsp salt
  • dash of pepper
  • ½ cup heavy cream
  • 4 ounces softened cream cheese, cut into small cubes (it will incorporate quicker and easier that way)
  • ⅓-1/2 cup shredded or grated Parmesan cheese
  • 1 tbsp ketchup
  1. Using the saute feature on your instant pot. Add oil and beef, saute for one minute, add onion and mushrooms and saute for two or three more minutes or until meat is no longer pink.
  2. Add pasta, water, broth, salt and pepper. Stir well and then push everything down as evenly as possible before putting the instant pot lid on. (this ensures the pasta will cook evenly)
  3. Place lid on Instant Pot and secure it. Select the beans/chili button and set time to 4 minutes.
  4. When Instant Pot finishes cooking, do a quick release and stir in the Heavy cream, cream cheese, Parmesan cheese and ketchup.
  5. Serve immediately. Can top with more Parmesan Cheese and dried parsley if desired.
