Healthy flavorful overnight oatmeal. Great apple pie flavor with sweet oats and diced apples that add the perfect crunch. Great way to have a quick and easy breakfast on hand or on the go.

Ingredients
  • 2 cups old-fashioned or steel cut oats
  • 2 cups unsweetened almond milk or coconut milk
  • ½ cup unsweetened apple sauce
  • 2 tbsp brown sugar or maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp vanilla extract
  • ½ tsp salt, scant
  • ⅛-1/4 tsp ground nutmeg
  • 1 large apple, peeled and diced (you can use any kind of apple that you prefer)
Instructions
  1. In a 2 quart bowl (one with measurements on the side and a lid like this one is best) combine almond milk, apple sauce, brown sugar, cinnamon, ginger, vanilla, salt, and nutmeg. Mix well with a whisk until combined.
  2. Add oats and stir again.
  3. Add diced apples, stir and cover with an airtight lid. Put in fridge overnight. May be kept in the fridge for up to 1 week.
