Zesty, flavorful chicken soup. Mixed together with celery, carrot, and onion it's a quick dinner to appease the masses!

Ingredients
¼ cup butter
1 tbsp olive oil
1 medium onion, chopped
1 garlic segment, minced
4 stalks celery, sliced
4-5 large carrots, peeled and sliced
8 cups chicken stock or broth (You can use water with chicken bouillon for the broth.)
1-2 cups water
2 cups diced precooked chicken breast or rotisserie chicken or raw chicken, cut into 1-inch pieces
1½ cups orzo pasta, uncooked
2 tbsp lemon juice, fresh squeezed
1 tsp sugar
salt and pepper to taste
Instructions
In a large stock pot or soup pot, melt the butter with the olive oil and add the onion, celery, and carrots. Make sure to salt and pepper. Sauté for 3-4 minutes. (If you are using raw chicken, sauté it in the butter and olive oil before adding the onion, celery, and carrots.)
Next, add minced garlic and sauté for 1-2 more minutes.
Add in the chicken stock/broth, precooked chicken, and the water. Bring to a boil.
Once water is boiling, add in the orzo pasta and continue boiling for 10-15 minutes or until pasta is tender.
Next, add in the sugar, lemon juice, and salt and pepper to taste.
You can also add in fresh or dried parsley for garnish and flavor.
