Perfect Potluck dessert made with Cream Cheese, Cool Whip, crushed pineapple and a homemade graham cracker crust. A classic favorite, for sure!

Ingredients
  • Homemade Graham Cracker Crust:
  • 12 regular-sized graham crackers, crushed into crumbs (approx 2½ cup graham cracker crumbs)
  • ½ cup butter, melted
  • 2 tbsp granulated sugar
  • Cream Cheese Pineapple Filling:
  • ½ cup butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 (20 ounce) can of crushed pineapple, drained really well
  • 1 (8 ounce) tub of Cool Whip
Instructions
  1. Preheat the oven to 350 degrees.
  2. For the crust: Combine the crushed graham cracker crumbs, granulated sugar and melted butter. (I do this in a large ziploc bag since that is usually how I crush my graham crackers and it keeps me from getting another bowl dirty.)
  3. Mix the ingredients together until well combined. Pour all but ½ cup of the prepared crumbs into a 8x8 glass baking dish and press down evenly to cover the bottom of the dish. Set the extra ½ cup of prepared crumbs aside.
  4. Bake crust in the 350-degree oven for 7 minutes. Let cool completely.
  5. For the filling: With a hand mixer or in your stand mixer, beat the softened butter and cream cheese together until smooth, add the powdered sugar and beat until well combined.
  6. Add the well-drained crushed pineapple and Cool Whip. Beat until combined.
  7. Spread filling mixture evenly over the cooled graham cracker crust. Sprinkle the ½ cup of reserved graham cracker mixture over the top of the filling. Cover and refrigerate for at least 3-4 hours before serving.
