Sugar cookie crust, cream cheese filling, and fresh fruit all come together for a delicious summer dessert everyone will love. Perfect for the 4th of July or any summer barbecue or potluck.

Ingredients
  • Sugar Cookie Crust:
  • ½ cup butter, softened
  • ⅔ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1⅓ cups all-purpose flour
  • 1 teaspoon cream of tartar (*If you do not have cream of tartar, omit the cream of tartar AND the baking soda in the recipe and replace with 1 tsp of baking powder.)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Cream Cheese Filling:
  • 8 ounces of softened cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh Fruit for the Top:
  • Strawberries, Grapes, Blueberries, Mango, Raspberries, Kiwi, Pineapple, canned mandarin oranges, ect.
Instructions
  1. Preheat oven to 350 degrees, Lightly spray a pizza pan or 9x13 baking dish with cooking spray and set aside (you can line the pan with parchment paper if you prefer.)
  2. With a hand mixer cream together softened butter and granulated sugar. Mix until creamy. Add egg and vanilla and mix until well combined.
  3. Add the flour, cream of tarter, baking soda and salt (*see note above about substitution if you do not have cream of tartar.)
  4. Mix well and then press the dough into a 9x13 pan, pizza pan or form it into a large circle on a pizza stone or large sheet pan.
  5. Bake at 350 for 10-12 minutes. The cookie should be just browning. If you are using a stone it may take a few more minutes to cook. Just be careful not to over cook or it will dry out the cookie.
  6. Let cookie cool completely before adding the cream cheese layer and fruit.
  7. INSTRUCTIONS FOR CREAM CHEESE LAYER:
  8. Combine the softened cream cheese, powdered sugar and vanilla in a medium size bowl. Use a hand mixer to mix it until smooth. There shouldn't be any lumps.
  9. Spread the cream cheese mixture evenly over the cookie crust leaving a ½ inch edge of the cookie showing.
  10. Cut up desired fruits and lay them in a desired pattern on top of the cream cheese layer.
  11. Cover and refrigerate until ready to serve. Refrigerate leftovers.
  12. *If you want to you can add a simple glaze on top of the fruit pizza. To do this you add 1 tbsp water to ¼ cup of apricot or peach jam. Be sure to strain out any chunks and then lightly brush the thin glaze over the fruit. It helps the fruit not dry out and makes the dessert a little shiny.
