Coconut Rice
Creamy, slightly sweet rice with just a hint of coconut. You won't believe how good this is and how it takes your favorite grilled meats and stir fry's up a notch.
  • 2 cups Jasmine Rice
  • 2 cups water
  • 1 15 ounce can coconut milk
  • 1 tbsp granulated sugar
  • 1½ tsp apple cider vinegar
  • 1 tsp salt
  1. Combine all ingredients in a 2 quart sauce pan that has a tight fitting lid.
  2. Mix well and bring to a boil. Stir often while bringing it to a boil.
  3. Once rice mixture is boiling turn the heat down to want it to barely be simmering. Stir while temperature goes down so rice won't stick to the bottom of the pan.
  4. Once rice is at a low simmer, put the lid on and set the timer for 20 minutes.
  5. When 20 minutes is up, remove lid and stir and fluff the rice.
  6. Serve with your favorite grilled meat or stir fry.
